Father’s Day Gift Ideas: Why Not Bake Your Own Coffee Cookies?

In one of our recent posts, we discussed how quick and easy can be to cook up your own Father’s Day gifts at home. Perfect for coffee-loving dads, coffee-theme cakes, cookies and baked goods in general can be surprisingly easy to throw together.

Here’s what you’ll need to bake your own fabulous Father’s Day gift this year:

For the Cookies:

  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup softened butter
  • 1 beaten egg
  • 1 ½ cups plain flour
  • 1 tablespoon coffee powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup chopped pecans
  • 2 cups chocolate chunks chips

For the Optional Coffee Drizzle:

  • ½ teaspoon instant coffee
  • 1 tablespoon water
  • ½ cup powdered sugar

Putting the whole thing together really couldn’t be easier - the process comprises just four simple steps as follows:

  1. Preheat the oven to 350° F (177° C). Meanwhile, combine the sugars with the egg and the softened butter in a bowl, using an electric whisker and combining until creamy. Add the rest of the ingredients and stir until combined, adding the chocolate chunks and pecans last.
  2. Place blobs of dough (around ¼ cup each) onto a large baking tray, being sure to leave at least 2 inches between each of them to allow for expansion. Place in the oven and bake for around 15 minutes until set around the edges, before taking out and leaving to cool for at least 30 minutes.
  3. Combine the ingredients to create the coffee drizzle in a small bowl, adjusting the measurements if necessary. The mixture should be fairly thick, but still loose enough to be drizzled over the cookies.
  4. When the cookies have fully cooled, treat them to a liberal drizzling of the mixture and leave for a while for the drizzle to set.

Your freshly baked cookies will be good for at least a few days, stored in an airtight container at room temperature. If looking to prep everything in advance, you can even freeze the cookie dough indefinitely. Simply take it out and allow it to thaw, before portioning it out and baking it in the normal way.
