  • 1 1/2 cups plain flour
  • 1/2 cup Brown Sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 2 teaspoons high-quality coffee powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1/3 cup canola oil
  • 2 eggs

For The Topping:

  • 1/3 cup Granulated Sugar
  • 1/3 cup Brown Sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup melted butter
  • 1 1/2 cups plain flour

For The Glaze:

  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon milk


  1. Set the oven to 190° C (i.e. 375° F) and place paper liners in a muffin tin with 12 cups.
  2. Prepare the topping first, by mixing the cinnamon, sugars and salt in a bowl, before beating in the melted butter and spreading out the mixture onto a tray. Leave to dry out in the open.
  3. Take a large bowl and combine the sugar, flour, baking powder, coffee powder and salt.
  4. Beat together the eggs, canola oil and milk in a separate bowl, before adding to the dry ingredients and stirring until just combined.
  5. Divide the mixture evenly between the 12 liners in the muffin tray, before sprinkling liberally with the topping which should now be mostly dry.
  6. Bake in the center of the oven for approximately 15 minutes, until baked all the way through (test with a cocktail stick).
  7. Mix the remaining ingredients together to create the glaze and drizzle over the top, before allowing time to set.

Your super sticky and decadent muffins are now ready to serve, which (of course) pair fantastically with a good cup of coffee.

For an added coffee kick, try adding a little more coffee powder of even some cooled espresso coffee to the glaze, tweaking the formula with additional powdered sugar to compensate if necessary.
