Coffee was first planted in Costa Rica in the late 18th century. Costa Rica was the first Central American country to have a fully established speciality coffee industry. This coffee is produced in very small quantities, called “microlots”, making it a particularly rare coffee.
El Mirador is a 15-hectare (i.e. 37 acre) coffee farm owned by Olman Aguilera. In his farm, Don Olman plants 2 coffee varietals: Villa Sarchi and Catuai. After harvesting and sorting, these coffees are laid out on patios to dry for three weeks as naturals before being sorted again and hulled.
